    Cut the puff pastry sheets into 5-inch squares. Place them in the refrigerator. Preheat your oven to 400 ° F (200 ° C).

    Béchamel sauce :

    In a saucepan, melt butter. Add the flour and salt, stirring frequently, until the mixture turns pale.

    Add the hot milk in 2 times, stirring constantly. Cook for about 7 minutes. Reduce heat and simmer for about 10 minutes.

    Add the spinach, turkey ham and cheese. Put aside.

    Place the puff pastry squares on a baking sheet lined with aluminum foil.

    Place 2 scoops of Béchamel sauce mixture, sprinkle with grated cheese and close the pockets by folding the corners. (Like on the photo) Brush with egg and 1 spoon of cold water.

    Bake for 20 minutes.
